Here’s a very simple yet tasty recipe for spicy strawberry jam. Enjoy!

Ingredients

  • 2 pounds strawberries
  • 1/4 cup lemon juice
  • 1/2 cup minced Serrano chile
  • 1 ounce fruit pectin
  • 4 cups sugar

Instructions

  1. Mash strawberries, and mix with minced serrano chiles, lemon juice, and pectin into pot and heat to a simmer on low.
  2. Slowly mix in sugar, making sure it doesn’t burn by stirring constantly.
  3. Once sugar is completely dissolved, allow to simmer for 5 minutes
  4. Increase heat to medium high, allowing ingredients to boil for an additional 5 minutes. Stir continuously.
  5. Remove from heat, stir in any boil foam, start canning.
  6. Makes 3 pints

Canning

  1. Boil jars and lids in water for 5 minutes.
  2. Pull hot jars from water, and fill with hot strawberry ingredients up to 1/4″ from the top.
  3. Clean rim of glass and place lids on sealing tightly.
  4. Return to boiling water, add water if needed until jars are completely covered.
  5. Boil for 5-10 minutes, remove from water and allow to cool to room temperature.
  6. It’s best to set the hot jars down on a towel or chopping board when cooling and not directly on cold counter.
